A delicious and diverse product, it is increasingly being sipped neat or used in drinks such as the Negroni, where the impact of its character can really be felt. As distillers, vermouth provides an opportunity to make a botanical product other than (but complementary to) gin and also opens the door for possible collaboration with local wineries. Distiller Siobhan Feeley of Sacred Distillery (a trailblazer in UK vermouth production) and Sara Jane Davis of Love Gin and Rex and the Negroni Club will take you through some fine new additions to the category and how they are made.
